W Aiyama Junmai Muroka Genshu is made with 50% polished Aiyama rice. The fresh, sweet, and sour aromas are reminiscent of strawberries, and the smooth, glossy sweetness is very satisfying.
Aiyama is known as the “diamond” of sake rice for its balanced umami.
Limited product Seasonal edition (from September) Lightly polished Aiyama with its soft flavour, is used to bring out the power of the rice to the maximum. Ripe grape flavour and a rich sweetness are featured, Junmaishu with single heat treatment and aged during the summer.

This sake is an earthy, umami-driven Japanese sake from Tottori Prefecture. What distinguishes this expression is a deliberate paradox: the rice is polished to an aggressive 50% a level typically reserved for Daiginjo yet the brewery channels that refinement into savory depth rather than floral delicacy, producing a sake unlike almost anything else in the Junmai Ginjo category.
